How do seasons affect food availability?


While a greater number and variety of food items are more readily available these days due to the improvement in transport and agricultural production methods, seasonal availability is still a major factor in the menu planning process.  

Some food items may still be available outside of the normal growing season but several factors including lower quality and higher cost usually discourage the professional menu planner from using these items outside of their peak seasonal availability.


It would not be logical to offer a customer an item such as fresh asparagus when it is not readily available due to the seasonal time of year.  And if it was located and purchased in its off-season it would be at a premium price.
