Service equipment 

In addition to kitchen equipment you may find it useful to have some of your own service equipment.  The chances are that you will be hiring equipment for large events, but you may still want to have your own equipment to make an eye-catching centre piece.  You may also take on some small events where the clients do not have much equipment of their own but where it is not really worth incurring the delivery charges on hired equipment.

Carrying equipment

Other equipment which must go on the list and which should have a pretty high priority is carrying equipment of various kinds.  Cold boxes, ice bags, meat trays and boxes all come into this category.  Large and flat trays are also useful for stacking bowl of food as they prevent one bowl from falling into the other and if the trays are interlocking, so much the better. 

As well as the specialised equipment, remember to start collecting large cardboard boxes just before a big event.

Office equipment

You should not forget the office when you are getting equipment together.  You will need account books and stationery as well as all the usual bits and pieces like staplers and hole punchers  Desk, computer, printer, software packages and telephones and a filing cabinet of some kind is essential.

Upgrading or fitting a commercial kitchen can be expensive, so you could consider leasing instead of purchasing your equipment.
