Answer:

It is illegal to sell food that is damaged, has deteriorated, perished and is unfit for human consumption.  It is essential to monitor food quality by controlling the following:

1. Deteriorated food

Deteriorated food can be identified by its odour, taste and appearance.  While it may not cause food borne illness, it can indicate poor storage conditions and handling methods that encourage the growth of food poisoning bacteria.

A stock rotation and food storage system will help minimise food deterioration and improve food quality.  This system operates on the concept of ‘first in, first out’.  It is also important to check all refrigeration temperatures regularly and food handling practices.

2. Out-of-date food

It is an offence to sell food that is past its use-by date.  Manufacturers place use-by dates on products to indicate the date which signifies the end of the estimated period (if stored in accordance with any stated storage conditions), after which the intact package of food should not be consumed because of health and safety reasons.

3. Best-before date

Best-before date, in relation to a package of food, is provided by manufactures to signify the end of the period during which the intact package of food (if stored in accordance with any stated storage conditions) will remain fully marketable and will retain any specific qualities for which express or implied claims have been made.

4. Foreign objects in food

Foreign objects that don’t belong in a food product.  They can end up in food when areas of your food operation breakdown.

To prevent this happening ensure:

    • your premises is kept clean and structurally sound
    • equipment is regularly serviced and cleaned
    • pests and vermin are prevented from entering the premises
    • staff have good personal hygiene habits
    • quality assurance measures are in place to check the quality of the food your business produces.
5. The law

National food safety standards have been developed to reduce food borne illness and help food business produce food that is safe to eat.
